Ingredients
Soya Chunks/Meal Maker– 1 Cup
Onion – 1
Tomato – 1
Mustard – 1/2 tea spoon
Urad dal – 1/2 tea spoon
Fennel seeds – ¼ tea spoon
Curry Leaves – 1 sprig
Tamarind extract – ½ cup
Salt – per taste
Sambar powder – 3 teaspoons
Coriander powder – 1.5 teaspoon
Procedure
STEP 1: Coarsely chop the onion and tomato. Heat oil in a pan, add the chopped onion and tomato and cook till it turns mushy.
STEP 2: Add the cooked onion and tomato to a blender. Once the mixture cools down blend to a fine paste.
STEP 3: Wash and soak the soya chunks in hot water for 10 minutes. The soya chunks will absorb the water and double up in size.
STEP 4: Soak the tamarind in water and extract the juice.
STEP 5: Heat oil in a pan, add mustard seeds and wait till it splutters. Add urad dal, fennel seeds and curry leaves.
STEP 6: Now add the onion – tomato paste.
STEP 7: Drain the water from the soya chunks and squeeze the extra water. Add this to the onion tomato gravy and mix well.
STEP 8: Add salt, sambar powder, coriander powder and the tamarind juice to the cooking gravy.
STEP 9: Cover and cook for 15 minutes until the soya chunks absorb all the masala flavours.
TIP: This is a spicy gravy/Kuzhambu that tastes good with Idli, dosa or rice.
