Beans & carrot poriyal


Beans – 20 chopped

Carrot – 1 peeled & chopped

Coconut – ¼ cup grated

Mustard – 1/2 tea spoon

Urad dal – 1/2 tea spoon

Dry red chilli – 2

Curry Leaves – 1 sprig

Salt – per taste


STEP 1: Wash and chop the vegetables.

STEP 2: Heat oil in a pan, add mustard seeds and wait till it splutters. Add urad dal, dry red chilli and curry leaves.

STEP 3: Add the chopped beans and carrot. Cook in the oil for 2 minutes.

STEP 4: Add ¼ cup of water and salt.

STEP 5: Cover the pan and cook for 5 – 7 minutes.

STEP 6: Once the mixture is cooked and becomes dry add the grated coconut. Mix well and turn off the heat in 1 minute.

TIP: This is a simple to make, tasty stir fry recipe that can be served with sambar rice or rasam rice.
