Prep Time – 5 Mins

Mango – 1 cup peeled and chopped
Jaggery (coarse dark brown sugar) – 5 pieces (medium size 2 inch pieces)
Mustard – ½ teaspoon
Urad dal – ½ teaspoon
Curry Leaves – 1 sprig
Dry red chilli – 2
Salt – per taste
Water – 1 cup
Oil – 1 tea spoon
STEP 1: In a microwave safe bowl add ½ cup water and jaggery and microwave for 3 minutes. The jaggery will melt in this process. Filter the jaggery syrup to remove the impurities using a fine sieve mesh.
STEP 2: Heat oil in a pan, add mustard and let it splutter. Add urad dal and fry till golden brown. Add curry leaves and broken dry red chilli.
STEP 3: Add chopped mangoes, required salt and ½ cup water. Mix well, cover and cook for 5 minutes.
STEP 4: Once the mango pieces are cooked add the jaggery syrup and cook for 5 more minutes.
TIP: This pachadi has a sweet, tangy and salty flavour, so it can be served with any rice or have it just like that (if you can wait for the rice to get cooked);-)
